Several times a year, a truck will come through town from Galveston, TX with fresh caught shrimp. When that bat-signal goes up, we get ourselves over to the sketchy car wash parking lot and buy some shrimp out of the back of a truck. This time, we decided to go simple and tasty with a shrimp boil.
1 head of garlic
1-2 tbsp Zatarain’s Crab and Shrimp boil liquid seasoning (to taste)
Stock pot of water
2-3 bay leaves
5 tbsp salt
1 large onion, quartered
2-3 ears of corn, cut into 2-3 pieces
1 lb red skinned or new potatoes
1 lb shrimp
1-2 lb smoked sausage (more is good)
Bring all of the boil seasonings to a boil, then add sausage, onion and potatoes. Let boils 10-15 minutes until the potatoes are mostly done. Add the corn, let boil 3 minutes, then add the shrimp and let boil 3 additional minutes. Drain everything and serve with all the napkins you can find.
