Now, a while back we posted a recipe of blonde brownies that we got from Chris’ family. In an honest assessment, they did not turn out very well. We recently obtained another batch of his family recipes, and this contained a slightly different version of the blondie recipe, which we made today (yay for snow days). This turned out quite well.
2 3/4 cups flour
2 1/2 tsp baking powder
1/2 tsp salt
2/3 cup canola
2 1/2 cups light brown sugar (lightly packed)
6 oz semisweet chocolate chips
1 cup chopped pecans (optional)
Preheat oven to 350, and grease a 9″x13″ pyrex pan. Combine flour, salt and baking powder. Mix and set aside. In large mixing bowl, mix together oil and sugar. One at a time, stir in eggs. Add 1 tsp vanilla now, if desired. Working in batches, mix in the dry ingredients. Once incorporated, stir in chips and nuts. Pour (or smash) into pan, and bake 30-35 minutes. Let cool before cutting.
