Banana Oatmeal Cookies

This is another recipe from Chris’ family recipe file.

Ingredients
1 cup sugar
1 cup shortening
1 egg
1 cup mashed bananas
1 1/2 cup AP flour
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp nutmeg
3/4 tsp cinnamon
1/2 cup nuts (or baking chips)
1 3/4 cup oats

Method
Cream shortening and sugar together until fluffy. Add egg and continue to beat. Add banana and beat. Mix together dry ingredients (except nuts and oats), and gradually add to the creamed mixture. Once homogenous, stir in oats and nuts or chips (we like butterscotch chips). Preheat oven to 350 degrees. Drop by the spoonful onto a parchment lined sheet and bake about 12 minutes, until lightly browned.

These are really lovely soft cookies. The butterscotch goes quite well with the flavor of the banana. I made a batch of these low sugar for Chris’ mom, using 1/2 cup of splenda baking bend instead of the 1 cup of sugar. They turned out almost identical to the full sugar version and were great.
