Mustard Greens

As another component of our comfort food feast, we decided to make some mustard greens, as they looked pretty nice when we went to the store.

3-4 strips of bacon, chopped
1 white onion, chopped
1 bunch of Mustard greens, cleaned, trimmed and roughly chopped
1 cup chicken broth
salt and pepper

Cook the bacon over medium-low heat until the fat has rendered out, then add the onion. Saute until translucent, then add the greens, a handful at a time until they’ve cooked down enough for them all to fit in the pan. Pour over the chicken broth and let cook until the liquid is nearly gone. Season to taste.

In the future, I think we’ll be adding a second bunch of greens to the same amount of bacon and onion, because the greens really do cook down to nothing. Regardless, the result we got tonight was quite tasty and we will definitely do this again.
