Banana Bread

Yesterday morning I got up fairly early and decided to do something with a bunch of ripe bananas that were sitting on the counter. After some digging through cookbooks and online, I finally settled on this recipe.

2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup sugar
4 very ripe bananas
1 teaspoon vanilla
1/2 cup vegetable oil
1/2 tsp cinnamon
1/4 tsp nutmeg

Preheat oven to 350. Combine dry ingredients in a bowl. In a separate bowl, beat the eggs and sugar together until smooth. Add this to the dry ingredients. Mash the bananas into a paste, and add them, along with any other remaining ingredients and stir to combine. I baked it in one greased 9×5 loaf pan for about 55 minutes, until a toothpick comes out clean. The end result was a nice, banana-y, moist quick bread.
Note: If you’re so inclined, you can add nuts, but the end result will probably be drier.
